This dish is my absolute favorite food right now and it has been for months.  I just don’t seem to get tired of it!  I can have it several times per day and am still ready for more.  It is super easy to make and the recipe will make a nice big batch that you and your family can eat for several days.  I hope you enjoy it as much as I do!

Ingredients

2 onions

6 potatoes (regular size)

32oz bag of frozen mixed vegetables

32oz bag of frozen green peas

1 14.5oz can of chopped tomatoes

1 14.5oz can of chickpeas

2 cups of coconut milk (cashew and almond milk work great too)

2 tablespoons extra virgin olive oil (cold pressed)

1 teaspoon curry powder

1 teaspoon garam masala (if you don’t have garam masala you can use 1 extra teaspoon of curry powder instead)

1 teaspoon cayenne pepper

2 teaspoons salt

 

Instructions

Boil water in pan large enough to handle 6 potatoes

Chop potatoes and add to boiling water

Chop onions

Put olive oil in a large saute pan and turn on low-medium heat

Put onions in the pan with the oil and saute for 5 minutes

Add curry powder, garam masala, cayenne pepper, and salt to the onions and saute for 5 more minutes

Add chopped tomatoes, chick peas, and coconut milk to the onions and stir on medium heat

Check potatoes and when soft strain and add to the onions

Add mixed vegetables and peas and stir all ingredients together

Cook on medium heat for approximately 15 minutes or until frozen vegetables are warmed through
