This is my World Famous Cashew Cheese Recipe.  I say “World Famous” because everyone loves it.  I like to wait until after people try it to tell them it is made of plants instead of cheese.  When I first started eating a plants-based diet I missed cheese dip.  You know the one that you melt a bunch of cheese and stir in some Rotel?  Well this is my plants-based version of that with cashews as a base.  I modified a few different cashew cheese recipes and came up with my own.  As far as I know, mine is the only one that uses the tomatoes and chili’s in the same fashion.  Below is the recipe and also a video of how to put it together.  It is super easy with just a few ingredients!

2 cups of raw cashews (not roasted or salted if possible)
1/2 cup of nutritional yeast. We buy Bragg (see link below for deal on a pack of 3)
Three cans of Rotel: if you like spicy like me buy the HOT version 🙂
I can’t always find Rotel in Hong Kong so I have learned you can also make your own “Rotel” combining tomatoes and jalapenos or hot peppers in a bit of water and slow simmer (4lbs tomatoes and 12 jalapeño or 12 hot chili peppers is nice)
1 teaspoon of onion powder
1 teaspoon of garlic powder
3/4 teaspoon of paprika
1 teaspoons of sea salt

Put all ingredients into blender blend until smooth and all done! You can slow simmer it if you want to serve it warm.
